One of his most liked liked dishes was the red curry and guava glazed Arcadian quail salad. Consisting of two plump farm raised Florida quail.  The chef Grilled them over hot coals and placed them in a salad of Florida &lt;span style="font-style: italic;"&gt;jackfruit &lt;/span&gt;and hydroponic baby greens from a Tampa farm.&lt;br /&gt;&lt;br /&gt;In total he prepared five dishes within the 45 minute segment of the show. Several chefs were impressed enough to come up to him later to get the events recipes.
